Instructions
Step 1: Preheat the Oven
Preheat your oven to 350°F (175°C).
Line a baking sheet with parchment paper or a silicone baking mat.
Step 2: Mix Dry Ingredients
In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, and oats. Set aside.
Step 3: Cream Butter, Sugars & Peanut Butter
In a large mixing bowl, beat the softened butter, peanut butter, granulated sugar, and brown sugar until light and fluffy (about 2–3 minutes).
Step 4: Add Egg and Vanilla
Add in the egg and vanilla extract. Beat until fully incorporated.
Step 5: Combine Wet and Dry Ingredients
Gradually mix the dry ingredients into the wet mixture, stirring until just combined.
Step 6: Add Mix-ins
