Ingredients
For the Pie Base:
4 large croissants (day-old works best), torn into large pieces
1 tbsp butter (for greasing the dish)
For the Egg Custard:
6 large eggs
1 cup whole milk
½ cup heavy cream
½ tsp salt
¼ tsp black pepper
¼ tsp garlic powder
¼ tsp onion powder
Pinch of ground nutmeg (optional, for warmth)
For the Fillings (feel free to mix & match):
1 cup cooked ground beef or breakfast sausage
½ cup chopped baby spinach
½ cup diced bell peppers
½ cup shredded cheddar cheese
½ cup shredded mozzarella cheese
¼ cup finely chopped green onions
Optional Toppings & Garnishes:
Extra cheese for topping
Fresh herbs like parsley or chives
Hot sauce or salsa on the side
Instructions
Step 1: Preheat and Prepare Dish
Preheat your oven to 350°F (175°C).
Grease a 9-inch pie dish or baking dish with butter to prevent sticking.
Step 2: Assemble the Croissant Layer
Cut or tear croissants into bite-sized chunks.
Place them in the greased dish in an even layer, lightly pressing them down.
Step 3: Add the Fillings
Sprinkle your chosen fillings—meats, veggies, cheeses—over the croissant pieces.
Make sure they’re evenly distributed so each bite is loaded with flavor.
Step 4: Make the Custard
In a bowl, whisk together eggs, milk, cream, salt, pepper, garlic powder, onion powder, and nutmeg.
Pour this mixture evenly over the croissant and filling layers.
Use a spatula to gently press everything down so the croissants soak up the custard.
Step 5: Bake the Pie
Cover the dish loosely with foil and bake for 25 minutes.
Remove the foil, sprinkle with extra cheese if desired, and bake uncovered for another 15–20 minutes, or until the top is golden and the center is set.
A knife inserted should come out mostly clean with just a little moisture.
Step 6: Cool & Serve
Let the pie cool for 5–10 minutes before slicing.
Garnish with chopped parsley or chives and serve warm.
Pair with a side of fruit salad or greens for a complete brunch spread.
Notes
Use Day-Old Croissants – Slightly stale croissants soak up the custard better without getting soggy.
Don’t Overbake – Check early to prevent the custard from drying out.
Customize Fillings – Use what you have: mushrooms, kale, caramelized onions, or any cheese blend.
Let Rest Before Serving – Helps everything set for clean slices.
Make It Vegetarian – Skip the meat and load up on colorful veggies.
