Ingredients
For the Casserole:
• 1 lb lean ground beef or thinly sliced beef steak
• 1 small yellow onion, diced
• 1 green bell pepper, diced
• 1 red bell pepper, diced
• 2 cups uncooked penne or rotini pasta
• 3 cups beef broth (low sodium)
• 1 tsp garlic powder
• 1 tsp onion powder
• ½ tsp black pepper
• ½ tsp salt
• 1 tbsp Worcestershire sauce
For the Creamy Cheese Sauce:
• 4 oz cream cheese (cubed)
• 1 cup shredded mozzarella cheese
• 1 cup shredded provolone cheese
• ½ cup milk (or more as needed for creaminess)
For Topping (Optional):
• Extra shredded cheese for topping
• Fresh parsley or green onions for garnish
Instructions
Step 1: Brown the Beef (Optional but Recommended)
In a large skillet over medium-high heat, cook the ground beef or sliced beef until browned and fully cooked.
Drain excess grease and transfer to your Crockpot.
This step adds flavor and ensures even texture in the finished dish.
Step 2: Add Vegetables and Seasonings
To the Crockpot, add diced onions, bell peppers, garlic powder, onion powder, black pepper, salt, and Worcestershire sauce.
Stir everything together with the cooked beef.
Step 3: Add Pasta and Broth
Add the uncooked pasta and pour the beef broth over the top. Stir gently to combine.
Make sure the pasta is submerged in the liquid as much as possible.
Step 4: Slow Cook
Cover and cook on LOW for 3–4 hours, or on HIGH for 1.5–2 hours.
Check the pasta at the 3-hour mark (on low) or 90-minute mark (on high). It should be tender but not mushy.
Step 5: Stir in the Cheese Sauce
Once the pasta is cooked, stir in the cubed cream cheese, mozzarella, and provolone.
Add the milk and stir everything until the cheese is melted and the sauce is smooth and creamy.
If the sauce is too thick, add more milk a little at a time until desired consistency is reached.
Step 6: Optional Final Touch
For an extra cheesy top, sprinkle a handful of mozzarella or provolone over the casserole and cover for 5–10 more minutes until melted.
Garnish with parsley or green onions before serving.
