For the Puff Pastry Stacks:

  • 1 package (2 sheets) frozen puff pastry, thawed

  • 6 oz sliced turkey ham

  • 6 oz cheese (Swiss, cheddar, or mozzarella work great)

  • 1 tbsp Dijon mustard

  • 1 egg (for egg wash)

  • 1 tbsp milk (for egg wash)

  • ½ tsp dried thyme or Italian seasoning (optional)

  • 1 tbsp sesame seeds or poppy seeds (optional for garnish)


Instructions

Step 1: Prep the Puff Pastry

  1. Preheat oven to 400°F (200°C).

  2. Line a baking sheet with parchment paper.

  3. Unfold the puff pastry sheets onto a lightly floured surface. If needed, roll slightly to even out the thickness.

  4. Cut each sheet into 9 equal squares (3×3) for a total of 18 squares.

Step 2: Assemble the Stacks

  1. Place half (9) of the squares on the prepared baking sheet.

  2. Spread a small amount of Dijon mustard on each square.

  3. Layer with turkey ham and a slice or small handful of cheese.

  4. Top each stack with a second puff pastry square.

  5. Use a fork to crimp the edges to seal.

Step 3: Add Egg Wash and Season

  1. In a small bowl, whisk together the egg and milk to make the egg wash.

  2. Brush the tops of each pastry stack with the egg wash.

  3. Sprinkle with sesame seeds, poppy seeds, or dried herbs if desired.

Step 4: Bake the Stacks

  1. Bake in the preheated oven for 18–22 minutes, or until puffed and golden brown.

  2. Transfer to a wire rack and let cool for 5 minutes before serving.

Notes

Keep Puff Pastry Cold – Work quickly and chill if needed before baking for best rise.
Don’t Overfill – Too much filling can cause the pastry to split or not bake evenly.
Seal Well – Use a fork to seal edges tightly and prevent cheese from leaking out.
Use Parchment – It prevents sticking and makes cleanup easy.
Let Them Cool Slightly – This helps the cheese set and avoids burns from hot filling.
