For the Crispy Potato Bites:

  • 2 pounds baby potatoes (or small potatoes), cut into bite-sized cubes
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Fresh parsley, finely chopped (for garnish)

For the Herb Yogurt Sauce:

 

  • 1 cup plain Greek yogurt (or regular yogurt)
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
  • 1 tablespoon fresh parsley, chopped
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

Step 1: Prepare the Potatoes

  1. Preheat your oven to 400°F (200°C).
  2. Wash and dry the potatoes. Cut them into bite-sized cubes or wedges.
  3. Place the potato pieces on a large baking sheet. Drizzle with olive oil and toss to coat evenly.
  4. Sprinkle the potatoes with garlic powder, onion powder, paprika, salt, and pepper, and toss again to evenly distribute the spices.

Step 2: Bake the Potatoes

  1. Arrange the potatoes in a single layer on the baking sheet, ensuring they aren’t crowded (this will help them get crispy).
  2. Bake for 25-30 minutes, flipping them halfway through, until the potatoes are golden brown and crispy on the outside and tender on the inside.

Step 3: Prepare the Herb Yogurt Sauce

  1. While the potatoes are baking, prepare the herb yogurt sauce.
  2. In a mixing bowl, whisk together the Greek yogurt, lemon juice, olive oil, garlic powder, fresh dill, fresh parsley, salt, and pepper.
  3. Taste and adjust the seasoning if needed. Add more lemon juice for extra tang or more herbs for a stronger flavor.

Step 4: Serve

 

  1. Once the potatoes are out of the oven, let them cool for a couple of minutes.
  2. Serve the crispy potato bites hot with the herb yogurt sauce on the side for dipping.
  3. Garnish the potatoes with freshly chopped parsley for a pop of color and extra freshness.

Notes

  • Cut Evenly: Make sure the potato pieces are cut into uniform sizes to ensure even cooking.
  • Don’t Overcrowd: Spread the potatoes out in a single layer on the baking sheet to get them crispy. Overcrowding will result in soggy potatoes.
  • Use Parchment Paper: For easy cleanup, line your baking sheet with parchment paper. It also helps to prevent sticking.
