Ingredients
Scale
- 1 can (14 oz) salmon, drained and flaked
- 1 cup breadcrumbs, divided (use panko for extra crispiness)
- 1/4 cup finely chopped onion
- 2 tablespoons fresh parsley, chopped (or 1 teaspoon dried)
- 1 teaspoon garlic powder
- 1/2 teaspoon smoked paprika (optional)
- Salt and pepper to taste
- 2 large eggs, lightly beaten
- 2 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 3 tablespoons vegetable oil, for frying
Instructions
Step 1: Prepare the Mixture
- In a large mixing bowl, combine the flaked salmon, 1/2 cup breadcrumbs, onion, parsley, garlic powder, smoked paprika (if using), salt, and pepper.
- Add the beaten eggs, mayonnaise, Dijon mustard, and lemon juice. Mix well until all ingredients are evenly combined.
Step 2: Form the Croquettes
- Divide the mixture into 8 equal portions and shape them into small patties or rounds.
- Coat each patty in the remaining breadcrumbs, pressing gently to ensure the crumbs stick well.
Step 3: Fry the Croquettes
- Heat the vegetable oil in a non-stick skillet over medium heat.
- Once the oil is hot, place the croquettes in the skillet, ensuring they don’t overcrowd the pan. Fry for 3-4 minutes per side, or until golden brown and crispy.
- Transfer the croquettes to a plate lined with paper towels to drain any excess oil.
Step 4: Serve
- Serve the croquettes warm with your favorite dipping sauce, such as tartar sauce, aioli, or a squeeze of fresh lemon.
Notes
- Use Fresh Herbs: If possible, fresh parsley or dill adds a burst of flavor.
- Keep the Mixture Moist: If it feels too dry, add a little more mayonnaise or a splash of milk.
- Test the Oil: Ensure the oil is hot enough before frying by dropping in a small piece of the mixture—it should sizzle immediately.
- Make Ahead: Form the croquettes ahead of time and refrigerate for up to 1 day before frying.
