  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 3 tablespoons vegetable oil, for frying

Instructions

Step 1: Prepare the Mixture

  1. In a large mixing bowl, combine the flaked salmon, 1/2 cup breadcrumbs, onion, parsley, garlic powder, smoked paprika (if using), salt, and pepper.
  2. Add the beaten eggs, mayonnaise, Dijon mustard, and lemon juice. Mix well until all ingredients are evenly combined.

Step 2: Form the Croquettes

  1. Divide the mixture into 8 equal portions and shape them into small patties or rounds.
  2. Coat each patty in the remaining breadcrumbs, pressing gently to ensure the crumbs stick well.

Step 3: Fry the Croquettes

  1. Heat the vegetable oil in a non-stick skillet over medium heat.
  2. Once the oil is hot, place the croquettes in the skillet, ensuring they don’t overcrowd the pan. Fry for 3-4 minutes per side, or until golden brown and crispy.
