Ingredients
For the Cottage Cheese Mixture:
-
1½ cups cottage cheese (small curd, well-drained)
-
1 egg, lightly beaten
-
¼ cup grated carrots
-
¼ cup finely chopped green onions
-
2 tbsp chopped fresh parsley
-
½ tsp garlic powder
-
½ tsp onion powder
-
¼ tsp black pepper
-
¼ tsp salt
-
½ cup breadcrumbs (plus more for coating if needed)
For Cooking:
-
2–3 tbsp vegetable oil or olive oil (for pan-frying)
For Dipping Sauce (Optional):
-
½ cup plain Greek yogurt
-
1 tbsp lemon juice
-
1 tsp Dijon mustard
-
Salt and pepper to taste
Instructions
Step 1: Prepare the Cottage Cheese Mix
In a large mixing bowl, add the cottage cheese and use a fork to break up any large curds.
Stir in the beaten egg, grated carrots, green onions, parsley, garlic powder, onion powder, black pepper, and salt.
Add breadcrumbs gradually, stirring until the mixture holds together. You want a thick, scoopable consistency.
If the mixture feels too wet, add an extra tablespoon of breadcrumbs.
Step 2: Shape the Delights
Scoop about 2 tablespoons of the mixture and shape into small patties or fritters.
Place them on a tray and lightly coat with extra breadcrumbs for added crispiness, if desired.
Let them rest in the fridge for 10–15 minutes to firm up before frying.
Step 3: Pan-Fry the Delights
Heat 2 tablespoons of oil in a non-stick skillet over medium heat.
Place the patties in the skillet, leaving some space between each one.
Cook for 3–4 minutes on each side until golden brown and crispy.
Transfer to a paper towel-lined plate to absorb excess oil.
Repeat with remaining mixture, adding more oil as needed.
Step 4: Make the Dipping Sauce (Optional)
While the patties cook, mix together Greek yogurt, lemon juice, Dijon mustard, salt, and pepper in a small bowl.
Stir until smooth and creamy.
Refrigerate until ready to serve.
Step 5: Serve and Enjoy
Serve your Crispy Cottage Cheese Delights warm with dipping sauce on the side.
Garnish with extra parsley or a sprinkle of paprika for a pop of color.
Notes
Drain the Cottage Cheese – Too much moisture can make the patties fall apart.
Chill Before Cooking – This helps them hold their shape better in the pan.
Use Non-Stick Cookware – Prevents sticking and ensures an even golden crust.
Don’t Overcrowd the Pan – Fry in batches for best results.
Customize the Flavor – Try adding Italian herbs, a pinch of chili flakes, or even a little grated cheese for extra flavor.
