Ingredients
Scale
- 2 cups cooked chicken, shredded or finely chopped
- 1 medium onion, finely chopped
- 2 tablespoons butter
- 3 tablespoons all-purpose flour
- 1 cup milk
- ½ teaspoon garlic powder
- ½ teaspoon paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
- 1 cup breadcrumbs (plus more for coating)
- 1 large egg, beaten
- ½ cup grated cheese (optional, for extra richness)
- Oil for frying
Instructions
Step 1: Prepare the Filling
- Heat butter in a skillet over medium heat. Add the chopped onion and sauté until softened.
- Stir in the flour and cook for 1-2 minutes to form a roux.
- Gradually pour in the milk, whisking constantly to avoid lumps. Cook until the mixture thickens into a smooth sauce.
- Add shredded chicken, garlic powder, paprika, salt, pepper, parsley, and cheese (if using). Mix well to combine.
- Remove from heat and let the mixture cool slightly.
Step 2: Shape the Croquettes
- Take about 2 tablespoons of the chicken mixture and shape it into an oval or ball.
- Repeat until all the mixture is used. Place the croquettes on a baking sheet and refrigerate for 15-20 minutes to firm up.
Step 3: Coat the Croquettes
- Dip each croquette into the beaten egg, then roll in breadcrumbs to coat evenly.
Step 4: Fry the Croquettes
- Heat oil in a deep fryer or heavy-bottomed pot to 350°F (175°C).
- Fry the croquettes in batches for 3-4 minutes, or until golden brown and crispy. Drain on paper towels.
Step 5: Serve
- Serve the croquettes hot with your favorite dipping sauce, such as ranch, ketchup, or garlic aioli.
Notes
- Chill Before Frying: Refrigerating the croquettes helps them hold their shape during frying.
- Even Frying: Fry in small batches to maintain the oil temperature.
- Use Leftover Chicken: Rotisserie chicken or leftover roast chicken works beautifully.
