  • 2 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 1 cup milk
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped
  • 1 cup breadcrumbs (plus more for coating)
  • 1 large egg, beaten
  • ½ cup grated cheese (optional, for extra richness)
  • Oil for frying

Instructions

Step 1: Prepare the Filling

  1. Heat butter in a skillet over medium heat. Add the chopped onion and sauté until softened.
  2. Stir in the flour and cook for 1-2 minutes to form a roux.
  3. Gradually pour in the milk, whisking constantly to avoid lumps. Cook until the mixture thickens into a smooth sauce.
  4. Add shredded chicken, garlic powder, paprika, salt, pepper, parsley, and cheese (if using). Mix well to combine.
  5. Remove from heat and let the mixture cool slightly.

Step 2: Shape the Croquettes

  1. Take about 2 tablespoons of the chicken mixture and shape it into an oval or ball.
  2. Repeat until all the mixture is used. Place the croquettes on a baking sheet and refrigerate for 15-20 minutes to firm up.

Step 3: Coat the Croquettes

  1. Dip each croquette into the beaten egg, then roll in breadcrumbs to coat evenly.

Step 4: Fry the Croquettes

  1. Heat oil in a deep fryer or heavy-bottomed pot to 350°F (175°C).
  2. Fry the croquettes in batches for 3-4 minutes, or until golden brown and crispy. Drain on paper towels.

Step 5: Serve

  1. Serve the croquettes hot with your favorite dipping sauce, such as ranch, ketchup, or garlic aioli.
