Ingredients

Scale

For the Chicken:

  • 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1 cup all-purpose flour
  • ½ cup cornstarch
  • 2 large eggs, beaten
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • Vegetable oil for frying

For the Bang Bang Sauce:

  • ½ cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon honey
  • 12 teaspoons hot sauce (adjust to taste)

Instructions

Step 1: Prepare the Chicken

  1. In a bowl, whisk together the flour, cornstarch, garlic powder, paprika, salt, and black pepper.
  2. Place the beaten eggs in a separate bowl.
  3. Dip each piece of chicken into the egg, then into the flour mixture, coating thoroughly.

Step 2: Fry the Chicken

  1. Heat about 1 inch of vegetable oil in a deep skillet or fryer over medium-high heat.
  2. Once the oil reaches 350°F (175°C), fry the chicken in batches for 4-5 minutes, turning halfway through, until golden brown and cooked through.
  3. Remove the chicken from the oil and place it on a plate lined with paper towels to drain excess oil.

Step 3: Make the Bang Bang Sauce

  1. In a small bowl, mix the mayonnaise, sweet chili sauce, honey, and hot sauce until smooth. Taste and adjust the heat level if desired.

Step 4: Toss and Serve

  1. Toss the crispy chicken pieces in the Bang Bang sauce until evenly coated.
  2. Serve immediately, garnished with chopped green onions or sesame seeds if desired.

Notes

  • Pat the Chicken Dry: Ensures the coating adheres properly.
  • Don’t Overcrowd the Pan: Fry in batches to keep the oil temperature consistent.
  • Make it Spicier: Add more hot sauce or a pinch of cayenne pepper to the sauce.
  • Bake Instead of Fry: For a lighter version, bake the coated chicken at 400°F (200°C) for 20-25 minutes, flipping halfway through.
