Ingredients

Scale
  • 1 lb cheese tortellini: Fresh or frozen, cooked according to package instructions.
  • 2 tablespoons olive oil: For sautéing the onions and mushrooms.
  • 1 medium onion, thinly sliced: Caramelized to add sweetness.
  • 2 cups mushrooms, sliced: Cremini or button mushrooms work great.
  • 3 garlic cloves, minced: For a boost of flavor.
  • 2 cups fresh spinach: Adds a touch of green and freshness.
  • 1 cup heavy cream: To create the creamy sauce.
  • ½ cup grated Parmesan cheese: For richness and depth.
  • ½ teaspoon dried thyme: Adds a subtle herbal note.
  • Salt and pepper to taste: To enhance the flavors.
  • Fresh parsley, chopped: For garnish.

Instructions

Step 1: Caramelize the Onions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  2. Add the sliced onions and cook, stirring occasionally, for 10-12 minutes until golden and caramelized. Remove and set aside.

Step 2: Sauté the Mushrooms
3. In the same skillet, add the remaining olive oil and the mushrooms.
4. Cook for 5-7 minutes, stirring occasionally, until browned and softened.

Step 3: Build the Sauce
5. Add the garlic to the mushrooms and sauté for 1 minute until fragrant.
6. Stir in the heavy cream, Parmesan cheese, and thyme.
7. Cook on low heat for 3-5 minutes until the sauce thickens slightly.

Step 4: Add Spinach and Tortellini
8. Toss in the fresh spinach and stir until wilted.
9. Add the cooked tortellini and caramelized onions to the skillet, tossing to coat everything evenly in the sauce.

Step 5: Season and Serve
10. Season with salt and pepper to taste.
11. Garnish with chopped parsley and extra Parmesan, if desired. Serve warm.

Notes

  • Use Fresh Tortellini: If possible, fresh tortellini gives the best texture and flavor.
  • Caramelize Onions Slowly: Don’t rush the process—it brings out their natural sweetness.
  • Don’t Overcook the Tortellini: Follow the package instructions to avoid mushy pasta.
