Ingredients
For the Orzo:
-
1 tbsp olive oil
-
2 tbsp unsalted butter
-
1 small onion, finely chopped
-
3 cloves garlic, minced
-
8 oz mushrooms (cremini or white), sliced
-
1 cup dry orzo pasta
-
2 cups vegetable broth or chicken broth
-
1½ cups milk (whole or 2%)
-
2 cups fresh baby spinach
-
½ cup grated Parmesan cheese
-
Salt and black pepper to taste
-
¼ tsp red pepper flakes (optional, for a kick)
-
Fresh parsley or thyme, for garnish (optional)
Instructions
Step 1: Sauté the Aromatics and Mushrooms
-
Heat olive oil and butter in a large skillet over medium heat.
-
Add chopped onion and cook for 2–3 minutes until soft and translucent.
-
Stir in garlic and cook for another 30 seconds.
-
Add sliced mushrooms and sauté for 5–6 minutes until they’re golden brown and tender.
Step 2: Toast the Orzo
5. Stir in the dry orzo and cook for 1–2 minutes, letting it toast slightly in the pan.
6. This adds depth of flavor and prevents sticking.
Step 3: Add Liquids and Simmer
7. Pour in the vegetable broth and milk. Stir well to combine.
8. Bring to a gentle simmer, reduce heat to low, and cook uncovered for 10–12 minutes, stirring occasionally.
9. The orzo will absorb the liquid and become creamy. If needed, add a splash more milk or broth to loosen the texture.
Step 4: Stir in Spinach and Cheese
10. Once the orzo is tender and creamy, stir in the fresh spinach.
11. Let it wilt for 1–2 minutes, then remove the pan from heat.
12. Stir in grated Parmesan cheese until melted and well combined.
13. Season with salt, black pepper, and red pepper flakes to taste.
Step 5: Serve and Garnish
14. Spoon into bowls and top with more Parmesan and a sprinkle of fresh herbs if desired.
15. Serve warm and enjoy every creamy, cheesy bite.
Notes
Stir Frequently – This helps prevent the orzo from sticking to the pan.
Use Fresh Spinach – It wilts perfectly and adds a fresh pop of color and nutrients.
Adjust Creaminess – Add more milk or broth at the end if it’s too thick.
Don’t Overcook – Orzo can get mushy if cooked too long.
Use Good Parmesan – Freshly grated cheese melts best and adds great flavor.
