Ingredients
For the Chicken:
- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil (for searing)
- Salt and pepper, to taste
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- 1 teaspoon Italian seasoning
For the Spinach and Cheese Filling:
- 1 cup fresh spinach, chopped (or use frozen, thawed, and drained)
- 1 cup cream cheese, softened
- ½ cup shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
- 1 clove garlic, minced
- 1 tablespoon mayonnaise (for extra creaminess)
- Salt and pepper, to taste
For the Topping:
- ½ cup shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
Instructions
Step 1: Prepare the Chicken Breasts
- Preheat your oven to 375°F (190°C).
- Season the chicken breasts with salt, pepper, garlic powder, onion powder, and Italian seasoning.
- Heat the olive oil in a skillet over medium-high heat. Sear the chicken breasts for 2-3 minutes per side, just until golden brown. Don’t worry about cooking them all the way through; they’ll finish cooking in the oven.
Step 2: Make the Spinach and Cheese Filling
- In a mixing bowl, combine the cream cheese, mozzarella, Parmesan, chopped spinach, garlic, and mayonnaise.
- Stir everything together until well combined, then season with salt and pepper to taste.
Step 3: Stuff the Chicken
- Carefully make a pocket in each chicken breast by slicing horizontally, but not all the way through.
- Spoon the creamy spinach mixture into each chicken breast, evenly dividing the filling between them.
Step 4: Bake the Chicken
- Place the stuffed chicken breasts in a baking dish.
- Sprinkle the mozzarella and Parmesan cheese on top of each stuffed chicken breast.
- Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through (the internal temperature should reach 165°F/75°C) and the cheese is bubbly and golden.

- Use fresh spinach for the best flavor, but frozen spinach works just as well—just make sure to drain it thoroughly.
