Ingredients

Scale
  • 2 tablespoons butter: Adds richness to the base.
  • 1 medium onion, diced: For a flavorful start.
  • 2 celery stalks, diced: Adds a subtle crunch.
  • 2 garlic cloves, minced: Enhances the depth of flavor.
  • 2 medium potatoes, peeled and diced: For a creamy, hearty texture.
  • 3 cups seafood stock or vegetable stock: The base of your chowder.
  • 1 cup heavy cream: Makes the chowder lusciously creamy.
  • 1 lb mixed seafood (shrimp, scallops, cod, or your choice): The star of the dish.
  • 1 cup frozen corn kernels: For a touch of sweetness.
  • 1 teaspoon smoked paprika: Adds warmth and subtle smokiness.
  • Salt and black pepper, to taste: To bring out the flavors.
  • 2 tablespoons fresh parsley, chopped (optional): For garnish and freshness.

Instructions

Step 1: Start the Base

  1. Melt the butter in a large pot over medium heat.
  2. Add the onion, celery, and garlic, cooking until softened, about 5 minutes.

Step 2: Build the Broth
3. Add the diced potatoes and pour in the seafood stock.
4. Bring to a boil, then reduce the heat and simmer until the potatoes are tender, about 15 minutes.

Step 3: Add the Cream and Seasonings
5. Stir in the heavy cream, smoked paprika, salt, and black pepper.
6. Simmer gently for 5 minutes, allowing the flavors to meld.

Step 4: Cook the Seafood
7. Add the mixed seafood and corn to the pot.
8. Cook for 5-7 minutes, or until the seafood is opaque and cooked through. Be careful not to overcook.

Step 5: Serve and Enjoy
9. Ladle the chowder into bowls and garnish with fresh parsley, if desired. Serve hot with crusty bread or oyster crackers.

Notes

  • Use Fresh or Frozen Seafood: Both work well, but ensure frozen seafood is thawed and patted dry before adding to the chowder.
  • Don’t Overcook the Seafood: Add it near the end to keep it tender and juicy.
  • Make It Dairy-Free: Swap heavy cream for coconut milk for a different flavor twist.
  • Add Bacon: Sauté chopped bacon with the onions for an extra layer of smoky flavor.
