Instructions
Step 1: Sauté the Mushrooms and Onion
- In a large pot, melt 2 tablespoons of butter over medium heat.
- Add the diced onion and sauté for about 3 minutes, until softened and translucent.
- Add the sliced mushrooms and sauté for another 5-7 minutes, until the mushrooms release their moisture and start to brown.
Step 2: Add the Garlic and Flour
- Add the minced garlic to the pot and cook for another minute until fragrant.
- Sprinkle in the 2 tablespoons of flour and stir well to coat the mushrooms and onions. Let the mixture cook for 2 minutes to remove the raw flour taste.
Step 3: Add the Broth and Seasonings
- Gradually pour in the vegetable or chicken broth, stirring constantly to avoid lumps.
- Stir in the paprika, dried dill, salt, and pepper. Bring the soup to a simmer and let it cook for 10-12 minutes, allowing the flavors to meld together.
Step 4: Add the Cream
- Reduce the heat to low and stir in the heavy cream. Let the soup simmer for another 5-7 minutes, until it becomes thick and creamy.
Step 5: Finish and Serve
- Stir in the lemon juice for a little brightness.
- Taste the soup and adjust the seasoning with more salt, pepper, or paprika as needed.
- Serve hot, garnished with chopped fresh parsley (optional), and enjoy with a side of crusty bread!

- Use fresh mushrooms – Fresh mushrooms will provide the best flavor and texture for this soup.
