  • 2 tablespoons all-purpose flour – To thicken the soup.
  • 4 cups vegetable or chicken broth – The base of the soup.
  • 1 cup heavy cream – Adds richness and creaminess to the soup.
  • 1 teaspoon paprika (preferably smoked) – A classic Hungarian spice.
  • 1 teaspoon dried dill – Adds a fresh, herby flavor.
  • Salt & pepper to taste – For seasoning.
  • 1 tablespoon lemon juice – To add brightness and balance the richness.
  • Fresh parsley, chopped – For garnish (optional).

Instructions

Step 1: Sauté the Mushrooms and Onion

  1. In a large pot, melt 2 tablespoons of butter over medium heat.
  2. Add the diced onion and sauté for about 3 minutes, until softened and translucent.
  3. Add the sliced mushrooms and sauté for another 5-7 minutes, until the mushrooms release their moisture and start to brown.

Step 2: Add the Garlic and Flour

  1. Add the minced garlic to the pot and cook for another minute until fragrant.
  2. Sprinkle in the 2 tablespoons of flour and stir well to coat the mushrooms and onions. Let the mixture cook for 2 minutes to remove the raw flour taste.

Step 3: Add the Broth and Seasonings

  1. Gradually pour in the vegetable or chicken broth, stirring constantly to avoid lumps.
  2. Stir in the paprika, dried dill, salt, and pepper. Bring the soup to a simmer and let it cook for 10-12 minutes, allowing the flavors to meld together.

Step 4: Add the Cream

  1. Reduce the heat to low and stir in the heavy cream. Let the soup simmer for another 5-7 minutes, until it becomes thick and creamy.

Step 5: Finish and Serve

  1. Stir in the lemon juice for a little brightness.
  2. Taste the soup and adjust the seasoning with more salt, pepper, or paprika as needed.
  3. Serve hot, garnished with chopped fresh parsley (optional), and enjoy with a side of crusty bread!

Notes

  • Use fresh mushrooms – Fresh mushrooms will provide the best flavor and texture for this soup.
  • Paprika – Smoked paprika gives this soup a deeper flavor, but you can use sweet paprika if that’s what you have on hand.
  • Add more herbs – Feel free to add a pinch of thyme or bay leaves to deepen the flavor.
