  • 1 cup fresh spinach – For color, texture, and extra nutrition.
  • Salt and pepper to taste – To balance the flavors.

Optional Garnishes:

  • Fresh basil or parsley, chopped – For a fresh, herby finish.

Instructions

Step 1: Prepare the Crockpot

  1. Place the chicken breasts in the bottom of your crockpot.
  2. Sprinkle Italian seasoning, red pepper flakes, salt, and pepper over the chicken.

Step 2: Make the Sauce

  1. In a bowl, combine the sun-dried tomatoes, garlic, chicken broth, heavy cream, and Parmesan.
  2. Pour the sauce mixture over the chicken, making sure the chicken is well covered.

Step 3: Cook the Chicken

  1. Cover and cook on low heat for 4-6 hours, or until the chicken is tender and cooked through.
  2. Shred the chicken with two forks, directly in the crockpot, and stir to coat the chicken in the sauce.

Step 4: Add the Spinach

  1. Stir in the fresh spinach and cook for an additional 10 minutes until wilted and incorporated into the sauce.

Step 5: Serve & Enjoy!

  1. Serve the creamy Tuscan chicken over pasta, rice, or with a side of crusty bread to soak up all the delicious sauce.
  2. Garnish with fresh basil or parsley and extra Parmesan, if desired.

Notes

  • Use Chicken Thighs – If you prefer dark meat, you can swap chicken breasts for thighs for a juicier result.
  • Customize the Veggies – Add in other veggies like mushrooms or artichoke hearts for extra flavor.
  • Don’t Overcook – Crockpot cooking times can vary depending on your slow cooker, so check for doneness at the 4-hour mark for tender chicken.
  • Add More Cream – If you prefer a creamier sauce, increase the heavy cream to 3/4 cup.
