Ingredients
-
1 tablespoon olive oil or butter
-
3 cups cooked and shredded chicken (rotisserie works great)
-
4 slices bacon, cooked and crumbled
-
1 (16 oz) package shelf-stable potato gnocchi
-
3 cloves garlic, minced
-
1 ½ cups chicken broth
-
1 cup heavy cream
-
1 (8 oz) block cream cheese, softened and cubed
-
1 cup shredded cheddar cheese
-
1 tablespoon ranch seasoning mix
-
Salt & black pepper to taste
-
Optional: chopped green onions or parsley for garnish
Instructions
Heat oil or butter in a large skillet over medium heat. Add the minced garlic and cook until fragrant, about 1 minute. Add gnocchi and stir for 2–3 minutes until lightly golden.
Pour in the chicken broth and heavy cream. Stir in the cream cheese cubes and ranch seasoning. Let the mixture simmer, stirring occasionally, until the cream cheese melts and the sauce begins to thicken (about 5–7 minutes).
Stir in the shredded chicken and crumbled bacon. Add cheddar cheese and stir until melted and everything is well combined. Season with salt and pepper to taste.
Let everything simmer for another 2–3 minutes until bubbly and creamy. Garnish with chopped green onions or parsley. Serve hot and dig in!
Notes
Use Pre-Cooked Chicken – Rotisserie chicken is a great time-saver.
Don’t Overcook the Gnocchi – Just simmer until tender; it cooks quickly.
Make it Spicy – Add a pinch of red pepper flakes or diced jalapeños for a little kick.
Swap the Cheese – Try mozzarella or Monterey Jack for a different cheesy twist.
