  • ½ tsp salt (or to taste) – Enhances all the flavors.
  • ¼ tsp black pepper – Adds a mild heat.
  • ½ lb shrimp, peeled, deveined, and chopped – Tender and juicy seafood goodness.
  • ½ lb lump crab meat – Sweet and delicate texture.
  • ¼ cup white rice (optional) – Helps thicken the bisque naturally.
  • 2 tbsp fresh parsley, chopped – For a bright, fresh finish.

Instructions

Step 1: Sauté the Aromatics

  1. In a large pot over medium heat, melt the butter and add olive oil.
  2. Add the onion, garlic, celery, and carrot. Sauté for 5 minutes until softened and fragrant.

Step 2: Build the Base

  1. Stir in the flour and cook for 1-2 minutes, stirring continuously to remove the raw flour taste.
  2. Slowly whisk in the seafood or chicken broth, ensuring there are no lumps.
  3. Add the tomato paste, Old Bay seasoning, smoked paprika, thyme, salt, and black pepper.
  4. Bring to a gentle simmer and cook for 15 minutes, allowing the flavors to develop.

Step 3: Blend for a Smooth Texture

  1. Using an immersion blender, blend the soup until smooth. If using a regular blender, carefully blend in batches and return to the pot.

Step 4: Add the Seafood

  1. Stir in the heavy cream and bring the soup back to a gentle simmer.
  2. Add the shrimp and crab meat, cooking for about 5 minutes until the shrimp is opaque and cooked through.
  3. If using rice for thickness, stir it in now and simmer for an additional 5 minutes.

Step 5: Final Touches and Serve

  1. Stir in the lemon juice and fresh parsley. Adjust seasoning if needed.
  2. Serve hot, garnished with extra parsley and a side of crusty bread or oyster crackers.
