Ingredients
For the Pasta:
- 12 oz fettuccine pasta
- 1 tablespoon salt (for boiling water)
For the Creamy Sauce:
- 1 tablespoon olive oil
- 1 lb beef sausage, sliced (or crumbled, if using ground)
- 3 cloves garlic, minced
- ½ teaspoon red pepper flakes (optional, for spice)
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 cup heavy cream (or half-and-half for a lighter option)
- ½ cup milk
- 1 cup grated Parmesan cheese
- ½ cup pasta water (reserved)
- 2 tablespoons butter
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
Step 1: Cook the Pasta
- Bring a large pot of salted water to a boil.
- Cook fettuccine according to package instructions until al dente.
- Reserve ½ cup pasta water, then drain and set aside.
Step 2: Cook the Beef Sausage
- Heat olive oil in a large skillet over medium heat.
- Add sliced beef sausage and cook for 5 minutes, until browned.
- Stir in garlic, red pepper flakes, Italian seasoning, salt, and black pepper. Cook for 1 minute until fragrant.
Step 3: Make the Creamy Sauce
- Lower heat to medium-low and pour in heavy cream and milk. Stir well.
- Add Parmesan cheese and butter, stirring until smooth and creamy.
- If the sauce is too thick, add reserved pasta water gradually until the desired consistency is reached.
Step 4: Combine Everything
- Add cooked fettuccine to the skillet, tossing to coat in the creamy sauce.
- Simmer for 1-2 minutes, letting the flavors meld.
Step 5: Serve & Enjoy!
- Garnish with fresh parsley and extra Parmesan.
- Serve warm with garlic bread or a side salad.
