Ingredients
-
1 cup cottage cheese (full-fat or low-fat)
-
3 large eggs
-
½ cup rolled oats (or oat flour)
-
1 tsp vanilla extract
-
½ tsp baking powder
-
¼ tsp salt
-
1–2 tsp honey or maple syrup (optional, for slight sweetness)
-
Cooking spray or melted butter (for the waffle iron)
Optional Add-Ins:
-
½ tsp cinnamon
-
1 tbsp ground flaxseed or chia seeds (for fiber boost)
Instructions
Step 1: Blend the Batter
-
In a blender, combine cottage cheese, eggs, oats, vanilla extract, baking powder, salt, and sweetener (if using).
-
Blend until the batter is smooth and no lumps remain—about 30 seconds to 1 minute.
-
Let the batter sit for 2–3 minutes while the waffle iron heats up (this helps thicken it slightly).
Step 2: Preheat the Waffle Iron
-
Preheat your waffle iron according to the manufacturer’s instructions.
-
Lightly grease with cooking spray or brush with melted butter to prevent sticking.
Step 3: Cook the Waffles
-
Pour the batter into the waffle iron (about ½ to ¾ cup, depending on your iron size).
-
Close the lid and cook for 3–5 minutes, or until the waffle is golden brown and cooked through.
-
Carefully remove and repeat with remaining batter.
Step 4: Serve
-
Serve warm with your favorite toppings—see ideas below!
-
For extra crispiness, toast waffles for 1–2 minutes before serving.
Notes
Use a Nonstick Waffle Iron – These waffles can be delicate, so nonstick is best.
Blend Thoroughly – A smooth batter ensures even texture and cooking.
Make it Sweeter – Add a banana or a few tablespoons of applesauce to the batter.
Go Savory – Skip the vanilla and sweetener, and add herbs, cheese, or spices.
Double & Freeze – Make a batch for the week and reheat in the toaster.
