Ingredients

Scale
  • 1 cup cottage cheese (full-fat or low-fat)

  • 3 large eggs

  • ½ cup rolled oats (or oat flour)

  • 1 tsp vanilla extract

  • ½ tsp baking powder

  • ¼ tsp salt

  • 12 tsp honey or maple syrup (optional, for slight sweetness)

  • Cooking spray or melted butter (for the waffle iron)

Optional Add-Ins:

  • ½ tsp cinnamon

  • 1 tbsp ground flaxseed or chia seeds (for fiber boost)

Instructions

Step 1: Blend the Batter

  1. In a blender, combine cottage cheese, eggs, oats, vanilla extract, baking powder, salt, and sweetener (if using).

  2. Blend until the batter is smooth and no lumps remain—about 30 seconds to 1 minute.

  3. Let the batter sit for 2–3 minutes while the waffle iron heats up (this helps thicken it slightly).

Step 2: Preheat the Waffle Iron

  1. Preheat your waffle iron according to the manufacturer’s instructions.

  2. Lightly grease with cooking spray or brush with melted butter to prevent sticking.

Step 3: Cook the Waffles

  1. Pour the batter into the waffle iron (about ½ to ¾ cup, depending on your iron size).

  2. Close the lid and cook for 3–5 minutes, or until the waffle is golden brown and cooked through.

  3. Carefully remove and repeat with remaining batter.

Step 4: Serve

  1. Serve warm with your favorite toppings—see ideas below!

  2. For extra crispiness, toast waffles for 1–2 minutes before serving.

Notes

Use a Nonstick Waffle Iron – These waffles can be delicate, so nonstick is best.

Blend Thoroughly – A smooth batter ensures even texture and cooking.

Make it Sweeter – Add a banana or a few tablespoons of applesauce to the batter.

Go Savory – Skip the vanilla and sweetener, and add herbs, cheese, or spices.

Double & Freeze – Make a batch for the week and reheat in the toaster.
