Ingredients

Scale

2½ cups all-purpose flour (or half whole wheat for extra fiber)
2¼ tsp active dry yeast (1 packet)
1½ tsp salt
1 tbsp honey or sugar
1 cup warm water (110°F / 43°C)
1 cup cottage cheese (room temperature)
2 tbsp melted butter or oil
1 egg (room temperature)

Optional Toppings:
Oats, sesame seeds, or poppy seeds for garnish


Instructions

Step 1: Activate the Yeast
In a large mixing bowl, combine warm water, honey, and yeast.
Let sit for 5–10 minutes until foamy. If the mixture doesn’t foam, your yeast may be expired.

Step 2: Mix Wet Ingredients
Stir in the cottage cheese, egg, and melted butter until well combined.

Step 3: Add Dry Ingredients
Add the flour and salt gradually, stirring until a shaggy dough forms.
Knead by hand for 8–10 minutes (or 5–6 minutes with a stand mixer) until smooth and elastic.

Step 4: Let the Dough Rise
Place the dough in a lightly oiled bowl, cover, and let rise in a warm place for 1 to 1½ hours, or until doubled in size.

Step 5: Shape and Second Rise
Punch down the dough, shape it into a loaf, and place in a greased 9×5-inch loaf pan.
Cover and let rise again for 30–45 minutes, until puffy and just above the rim of the pan.

Step 6: Bake
Preheat oven to 375°F (190°C).
Bake for 35–40 minutes, or until the top is golden and the loaf sounds hollow when tapped.
Let cool in the pan for 5–10 minutes, then transfer to a wire rack to cool completely.

Notes

Use Room Temperature Ingredients – Helps the yeast activate and the dough rise evenly.
Don’t Overflour – The dough should be slightly tacky but not wet.
Blending Cottage Cheese – Optional, but makes for a smoother texture.
Make it Savory or Sweet – Add herbs and garlic or a touch of cinnamon and raisins.
Store Properly – Keep wrapped tightly to maintain moisture.
