  • ¾ cup cottage cheese (full-fat or low-fat, your choice)

  • 2 large eggs

  • â…“ cup honey or maple syrup

  • 1 tsp vanilla extract

  • ¼ cup coconut oil (melted) or neutral oil

Dry Ingredients:

  • 1½ cups all-purpose flour (or white whole wheat flour)

  • ½ cup rolled oats

  • 1 tsp baking soda

  • ½ tsp baking powder

  • ½ tsp salt

  • 1 tsp cinnamon

  • ¼ tsp nutmeg (optional, for extra warmth)

Optional Add-ins:

  • ½ cup chopped walnuts or pecans

  • ½ cup dark chocolate chips

  • 2 tbsp ground flaxseed or chia seeds


Instructions

Step 1: Preheat and Prep the Pan
Preheat your oven to 350°F (175°C).
Line a 9×5-inch loaf pan with parchment paper, leaving some overhang for easy lifting later.

Step 2: Mash the Bananas
In a large mixing bowl, mash the ripe bananas with a fork or masher until smooth. A few small lumps are okay—they add texture.

Step 3: Add Wet Ingredients
Add the cottage cheese, eggs, honey (or maple syrup), vanilla extract, and melted coconut oil to the mashed bananas.
Whisk everything together until smooth and creamy.

Step 4: Mix in Dry Ingredients
Sprinkle in the flour, oats, baking soda, baking powder, salt, cinnamon, and nutmeg.
Use a rubber spatula to gently fold the dry ingredients into the wet until just combined.
Don’t overmix—it will make the bread dense.

Step 5: Add Extras (Optional)
Gently fold in chopped nuts, chocolate chips, or any other add-ins you’re using.

Step 6: Bake the Bread

Notes

Use Very Ripe Bananas – The more brown spots, the better. They’re sweeter and more flavorful.
Don’t Overmix – Gently fold in ingredients to keep the texture light and moist.
Let It Cool – Slicing too early can make it gummy. Cool completely for the best texture.
