- 1 sheet of puff pastry (for the top)
- 2 cups cooked corned beef, shredded
- 1 medium onion, finely chopped
- 1 large potato, peeled, boiled, and mashed
- 2 tablespoons butter
- Salt and pepper, to taste
- 1 teaspoon Worcestershire sauce
- 1 egg, beaten (for egg wash)
For the Chips:
- 4 large potatoes, peeled and cut into thick slices
- 2 tablespoons vegetable oil
- Salt, to taste
For the Gravy:
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 2 cups beef broth
- 1 teaspoon Worcestershire sauce
- Salt and pepper, to taste
Instructions
Step 1: Prepare the Filling
- Heat the butter in a skillet over medium heat. Add the chopped onion and sauté until softened, about 5 minutes.
- In a large bowl, mix the cooked corned beef, sautéed onion, mashed potato, Worcestershire sauce, and season with salt and pepper. Stir until well combined.
Step 2: Assemble the Pie
- Preheat your oven to 375°F (190°C).
- Line a pie dish with the shortcrust pastry, pressing it gently into the edges.
- Spoon the corned beef filling into the pie shell, smoothing it out evenly.
- Cover with the puff pastry sheet, pressing the edges to seal. Trim any excess and crimp the edges with a fork.
- Brush the top with beaten egg and cut a few small slits to allow steam to escape.
Step 3: Bake the Pie
- Place the pie on a baking sheet and bake for 30-35 minutes, or until the pastry is golden brown and crisp.
Step 4: Make the Chips
- While the pie bakes, preheat the oven to 425°F (220°C) (or use an air fryer).
- Toss the sliced potatoes with vegetable oil and a pinch of salt. Spread evenly on a baking sheet.
- Bake for 25-30 minutes, turning halfway through, until golden and crispy.
Step 5: Prepare the Gravy
- In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes to form a roux.
- Gradually whisk in the beef broth, stirring constantly to prevent lumps. Add Worcestershire sauce and season with salt and pepper.
- Simmer for 5-7 minutes until thickened. Keep warm.
