For the Pie:

  • 1 sheet of shortcrust pastry (store-bought or homemade)
  • 1 sheet of puff pastry (for the top)
  • 2 cups cooked corned beef, shredded
  • 1 medium onion, finely chopped
  • 1 large potato, peeled, boiled, and mashed
  • 2 tablespoons butter
  • Salt and pepper, to taste
  • 1 teaspoon Worcestershire sauce
  • 1 egg, beaten (for egg wash)

For the Chips:

  • 4 large potatoes, peeled and cut into thick slices
  • 2 tablespoons vegetable oil
  • Salt, to taste

For the Gravy:

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups beef broth
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper, to taste

Instructions

Step 1: Prepare the Filling

  1. Heat the butter in a skillet over medium heat. Add the chopped onion and sauté until softened, about 5 minutes.
  2. In a large bowl, mix the cooked corned beef, sautéed onion, mashed potato, Worcestershire sauce, and season with salt and pepper. Stir until well combined.

Step 2: Assemble the Pie

  1. Preheat your oven to 375°F (190°C).
  2. Line a pie dish with the shortcrust pastry, pressing it gently into the edges.
  3. Spoon the corned beef filling into the pie shell, smoothing it out evenly.
  4. Cover with the puff pastry sheet, pressing the edges to seal. Trim any excess and crimp the edges with a fork.
  5. Brush the top with beaten egg and cut a few small slits to allow steam to escape.

Step 3: Bake the Pie

  1. Place the pie on a baking sheet and bake for 30-35 minutes, or until the pastry is golden brown and crisp.

Step 4: Make the Chips

  1. While the pie bakes, preheat the oven to 425°F (220°C) (or use an air fryer).
  2. Toss the sliced potatoes with vegetable oil and a pinch of salt. Spread evenly on a baking sheet.
  3. Bake for 25-30 minutes, turning halfway through, until golden and crispy.

Step 5: Prepare the Gravy

  1. In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes to form a roux.
  2. Gradually whisk in the beef broth, stirring constantly to prevent lumps. Add Worcestershire sauce and season with salt and pepper.
  3. Simmer for 5-7 minutes until thickened. Keep warm.

Step 6: Serve and Enjoy

  1. Slice the pie and serve with hot, crispy chips. Pour the gravy generously over both for the ultimate comfort meal.
