Ingredients

Scale
  • 3 ripe bananas, mashed
  • 2 large eggs
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1 3/4 cups all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon instant espresso powder
  • 1/2 cup sour cream or Greek yogurt
  • 1 cup semi-sweet chocolate chips

Instructions

Step 1: Prepare the Oven and Pan

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line it with parchment paper, leaving an overhang for easy removal.

Step 2: Mix the Wet Ingredients

  1. In a large bowl, whisk together the mashed bananas, eggs, melted butter, vanilla extract, granulated sugar, and brown sugar until smooth.

Step 3: Combine the Dry Ingredients

  1. In a separate bowl, sift together the flour, cocoa powder, baking soda, salt, and espresso powder.

Step 4: Make the Batter

  1. Gradually fold the dry ingredients into the wet mixture until just combined. Avoid overmixing.
  2. Stir in the sour cream or Greek yogurt, followed by the chocolate chips.

Step 5: Bake

  1. Pour the batter into the prepared loaf pan, spreading it evenly.
  2. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out with just a few moist crumbs.

Step 6: Cool and Serve

  1. Allow the bread to cool in the pan for 10 minutes, then use the parchment paper overhang to lift it out. Let it cool completely on a wire rack before slicing and serving.

Notes

  • Use Ripe Bananas: The riper the bananas, the sweeter and more flavorful your bread will be.
  • Don’t Overmix: Overmixing the batter can make the bread dense instead of tender.
  • Customize the Add-Ins: Swap chocolate chips for dark chocolate chunks or add nuts for extra texture.
  • Store Properly: Wrap the cooled bread in plastic wrap or store in an airtight container to keep it moist.
