Ingredients
- 2 boneless, skinless chicken breasts, thinly sliced
- 2 medium zucchinis, sliced into half-moons
- 2 tablespoons olive oil (or your preferred cooking oil)
- 1 small onion, sliced
- 2 garlic cloves, minced
- 1 tablespoon soy sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon rice vinegar
- 1 tablespoon honey
- 1 teaspoon sesame oil
- ½ teaspoon crushed red pepper flakes (optional, for heat)
- Salt and pepper to taste
- Sesame seeds (optional, for garnish)
- Fresh cilantro (optional, for garnish)
Instructions
Thinly slice the chicken breasts into strips. Slice the zucchini into half-moons, and chop the onion and garlic.
In a small bowl, combine the soy sauce, hoisin sauce, rice vinegar, honey, sesame oil, and red pepper flakes (if using). Mix well and set aside.
Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat. Add the chicken strips and cook for 4-5 minutes, or until the chicken is cooked through and browned. Remove the chicken from the skillet and set it aside.
In the same skillet, add the remaining tablespoon of olive oil. Add the onion and garlic, and cook for 1-2 minutes, or until fragrant. Add the zucchini and cook for another 3-4 minutes, stirring occasionally, until the zucchini is tender but still slightly crisp.
Return the cooked chicken to the skillet. Pour the sauce over the chicken and zucchini, stirring to coat everything evenly. Cook for an additional 2-3 minutes to heat everything through and allow the sauce to thicken slightly.
Serve the stir-fry warm, garnished with sesame seeds and fresh cilantro if desired. This dish goes well with steamed rice or noodles for a complete meal.

- Adjust the Sauce – Feel free to adjust the sweetness or saltiness of the sauce to suit your taste.
- Add More Vegetables – You can also add other vegetables like bell peppers, mushrooms, or carrots for more variety.
