For the Filling:

  • 2 cups cooked shredded chicken (rotisserie chicken works great)

  • 8 oz cream cheese, softened

  • ½ cup sour cream

  • 1 tbsp taco seasoning (homemade or store-bought)

  • 1 cup shredded cheddar cheese

  • ¼ cup diced green onions

  • ¼ cup diced red bell pepper (optional for crunch and color)

  • 1 tbsp chopped fresh cilantro (optional)

For Assembly:

  • 5 large flour tortillas (10-inch size)

Optional Toppings for Serving:

  • Salsa or pico de gallo

  • Guacamole

  • Jalapeño slices

  • Extra cilantro


Instructions

Step 1: Make the Filling

  1. In a large bowl, combine softened cream cheese, sour cream, and taco seasoning.

  2. Mix until smooth and fully blended.

  3. Add shredded chicken, cheddar cheese, green onions, bell pepper, and cilantro.

  4. Mix until evenly combined.

Step 2: Assemble the Pinwheels

  1. Lay a flour tortilla flat on a clean surface.

  2. Spread about ¾ cup of the chicken mixture evenly over the tortilla, leaving a small border around the edges.

  3. Roll the tortilla up tightly, starting from one end to the other.

  4. Wrap the rolled tortilla in plastic wrap to hold its shape.

  5. Repeat with the remaining tortillas and filling.

Step 3: Chill the Rolls

  1. Refrigerate the wrapped rolls for at least 1 hour (up to overnight).

  2. Chilling helps the pinwheels firm up and makes slicing easier.

Step 4: Slice & Serve

 

  1. Unwrap each roll and use a sharp knife to slice into 1-inch pieces.

  2. Arrange on a platter and serve as-is or with dipping sauces on the side.

Notes

Use Room Temp Cream Cheese – Makes the mixture easier to spread.
Roll Tightly – This keeps the pinwheels compact and prevents them from falling apart.
Chill Well – Refrigeration helps them hold their shape when slicing.
Customize the Heat – Add diced jalapeños or a dash of hot sauce if you like it spicy.
Use Fresh Tortillas – They roll more easily without tearing.
