¼ cup diced green onions

1 tbsp chopped fresh cilantro (optional)
For Assembly:
-
5 large flour tortillas (10-inch size)
Optional Toppings for Serving:
-
Salsa or pico de gallo
-
Guacamole
-
Jalapeño slices
-
Extra cilantro
Instructions
Step 1: Make the Filling
-
In a large bowl, combine softened cream cheese, sour cream, and taco seasoning.
-
Mix until smooth and fully blended.
-
Add shredded chicken, cheddar cheese, green onions, bell pepper, and cilantro.
-
Mix until evenly combined.
Step 2: Assemble the Pinwheels
-
Lay a flour tortilla flat on a clean surface.
-
Spread about ¾ cup of the chicken mixture evenly over the tortilla, leaving a small border around the edges.
-
Roll the tortilla up tightly, starting from one end to the other.
-
Wrap the rolled tortilla in plastic wrap to hold its shape.
-
Repeat with the remaining tortillas and filling.
Step 3: Chill the Rolls
-
Refrigerate the wrapped rolls for at least 1 hour (up to overnight).
-
Chilling helps the pinwheels firm up and makes slicing easier.
Step 4: Slice & Serve
-
Unwrap each roll and use a sharp knife to slice into 1-inch pieces.
-
Arrange on a platter and serve as-is or with dipping sauces on the side.
Notes
Use Room Temp Cream Cheese – Makes the mixture easier to spread.
Roll Tightly – This keeps the pinwheels compact and prevents them from falling apart.
Chill Well – Refrigeration helps them hold their shape when slicing.
Customize the Heat – Add diced jalapeños or a dash of hot sauce if you like it spicy.
Use Fresh Tortillas – They roll more easily without tearing.
