Ingredients

  • 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 2 cups sliced mushrooms (button, cremini, or your favorite type)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 ½ cups Arborio rice (or any short-grain rice)
  • 4 cups chicken broth (preferably low-sodium)
  • 1 cup dry white wine (or chicken broth for a non-alcoholic version)
  • ¾ cup grated Parmesan cheese
  • 1 tablespoon butter
  • Salt and pepper, to taste
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

Step 1: Cook the Chicken

  1. Heat olive oil in a large skillet or saucepan over medium heat.
  2. Season the chicken with salt and pepper, then add it to the pan.
  3. Cook until browned and cooked through, about 6-8 minutes. Remove from the pan and set aside.

Step 2: Sauté the Mushrooms and Aromatics

  1. In the same pan, add the mushrooms, onion, and garlic.
  2. Cook, stirring occasionally, until the mushrooms have released their moisture and the onions are translucent, about 5 minutes.

Step 3: Toast the Rice

  1. Stir in the Arborio rice and cook for 2-3 minutes, allowing the rice to lightly toast and soak up the flavors.

Step 4: Add the Liquid

  1. Pour in the white wine (or extra chicken broth) and stir until it is mostly absorbed by the rice.
  2. Begin adding the chicken broth, 1 cup at a time, stirring constantly. Wait until most of the liquid is absorbed before adding the next cup. Continue this process for about 20-25 minutes until the rice is creamy and tender.

Step 5: Finish the Risotto

  1. Once the rice is cooked and creamy, stir in the cooked chicken, Parmesan cheese, and butter.
  2. Season with additional salt and pepper to taste.

Step 6: Serve & Garnish

  1. Spoon the risotto onto plates or bowls, garnish with fresh parsley, and serve hot.

Notes

Stir Constantly – Stirring ensures the rice cooks evenly and helps it release its natural starches for that creamy texture.
Use Homemade Broth – If possible, use homemade chicken broth for the best flavor.
Don’t Rush the Process – Adding broth slowly and allowing it to be absorbed makes all the difference in achieving the perfect consistency.
Add Extra Veggies – You can throw in peas or spinach at the end for a burst of color and added nutrients.
