Ingredients
For the Chicken:

4 boneless, skinless chicken breasts (or thighs), cut into cutlets

For the Mushroom Sauce:

2 cups sliced mushrooms (white button or cremini)

1 can (10.5 oz) cream of mushroom soup

½ cup chicken broth

½ cup heavy cream

1 tsp dried thyme

1 tsp parsley (plus extra for garnish)
For Topping:

1 ½ cups shredded mozzarella cheese

½ cup grated Parmesan cheese
Instructions
Step 1: Prepare the Chicken
In a shallow dish, mix flour, garlic powder, onion powder, salt, and pepper.
Dredge each chicken cutlet in the seasoned flour, shaking off the excess.
Step 2: Sear the Chicken
In a large skillet, heat olive oil and butter over medium heat.
Add the chicken cutlets and cook for 3-4 minutes per side until golden brown (they don’t need to be fully cooked through).
Transfer the seared chicken to a greased 9×13 inch baking dish.
Step 3: Make the Mushroom Sauce
In the same skillet, add the sliced mushrooms and cook for about 5 minutes until softened.
Add the chopped onion and minced garlic, sautéing until fragrant.
Pour in the chicken broth and scrape up any brown bits from the bottom of the pan.
Stir in the cream of mushroom soup, heavy cream, thyme, and parsley.
Let the sauce simmer for 3-4 minutes until slightly thickened.
Step 4: Assemble the Dish
Pour the mushroom sauce evenly over the chicken in the baking dish.
Sprinkle the mozzarella cheese and Parmesan cheese evenly over the top.
Step 5: Bake the Chicken Gloria
Preheat your oven to 350°F (175°C).
Bake uncovered for 25-30 minutes, until the chicken is fully cooked and the cheese is melted and bubbly.

Sprinkle extra parsley on top before serving.
