For the Noodles and Chicken:

  • 8 oz chow mein noodles (or spaghetti as a substitute)
  • 1 lb boneless, skinless chicken breast (thinly sliced)
  • 1 teaspoon cornstarch
  • 1 tablespoon soy sauce
  • 2 tablespoons vegetable oil

For the Vegetables:

  • 1 cup shredded cabbage
  • ½ cup julienned carrots
  • ½ cup sliced bell peppers
  • ½ cup bean sprouts (optional)
  • 3 cloves garlic (minced)
  • 2 green onions (sliced)

For the Chow Mein Sauce:

 

  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon sugar
  • ¼ teaspoon black pepper
  • ¼ cup chicken broth (or water)

Instructions

Step 1: Cook the Noodles

  1. Boil chow mein noodles according to package instructions. Drain and set aside.

Step 2: Prepare the Chicken

  1. Toss sliced chicken with soy sauce and cornstarch. Let it marinate for 10 minutes.

Step 3: Make the Sauce

  1. In a small bowl, whisk together soy sauce, oyster sauce, hoisin sauce, sesame oil, sugar, black pepper, and chicken broth.

Step 4: Stir-Fry the Chicken

  1. Heat 1 tablespoon oil in a large skillet or wok over medium-high heat. Add chicken and cook until browned, about 4–5 minutes. Remove and set aside.

Step 5: Stir-Fry the Vegetables

  1. Add the remaining 1 tablespoon oil to the skillet. Stir-fry garlic, cabbage, carrots, and bell peppers for 2–3 minutes until slightly softened.

Step 6: Combine Everything

  1. Return the chicken to the skillet, add cooked noodles, and pour in the sauce. Toss everything together for 2–3 minutes until well coated.
  2. Stir in green onions and bean sprouts, then remove from heat.

Step 7: Serve and Enjoy!

 

  1. Serve hot, garnished with extra green onions or sesame seeds if desired.

Notes

  • Use High Heat: A hot pan gives the best stir-fry texture.
  • Prep Ahead: Have all ingredients ready before you start cooking.
