For the Noodles and Chicken:
- 8 oz chow mein noodles (or spaghetti as a substitute)
- 1 lb boneless, skinless chicken breast (thinly sliced)
- 1 teaspoon cornstarch
- 1 tablespoon soy sauce
- 2 tablespoons vegetable oil
For the Vegetables:
- 1 cup shredded cabbage
- ½ cup julienned carrots
- ½ cup sliced bell peppers
- ½ cup bean sprouts (optional)
- 3 cloves garlic (minced)
- 2 green onions (sliced)
For the Chow Mein Sauce:
- 3 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon hoisin sauce
- 1 teaspoon sesame oil
- 1 teaspoon sugar
- ¼ teaspoon black pepper
- ¼ cup chicken broth (or water)
Instructions
Step 1: Cook the Noodles
- Boil chow mein noodles according to package instructions. Drain and set aside.
Step 2: Prepare the Chicken
- Toss sliced chicken with soy sauce and cornstarch. Let it marinate for 10 minutes.
Step 3: Make the Sauce
- In a small bowl, whisk together soy sauce, oyster sauce, hoisin sauce, sesame oil, sugar, black pepper, and chicken broth.
Step 4: Stir-Fry the Chicken
- Heat 1 tablespoon oil in a large skillet or wok over medium-high heat. Add chicken and cook until browned, about 4–5 minutes. Remove and set aside.
Step 5: Stir-Fry the Vegetables
- Add the remaining 1 tablespoon oil to the skillet. Stir-fry garlic, cabbage, carrots, and bell peppers for 2–3 minutes until slightly softened.
Step 6: Combine Everything
- Return the chicken to the skillet, add cooked noodles, and pour in the sauce. Toss everything together for 2–3 minutes until well coated.
- Stir in green onions and bean sprouts, then remove from heat.
Step 7: Serve and Enjoy!
- Serve hot, garnished with extra green onions or sesame seeds if desired.
