  • 2 cans (15 oz each) sweet corn, drained
  • 8 oz cream cheese, softened
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup chopped green onions (optional)
  • 1/2 cup diced green chilies (optional, for added heat)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh chopped cilantro (optional, for garnish)

Instructions

Step 1: Preheat the Oven

Preheat your oven to 375°F (190°C).

Step 2: Mix the Ingredients

In a large mixing bowl, combine the cream cheese, sour cream, cheddar cheese, mozzarella cheese, and garlic powder, paprika, salt, and pepper. Stir until smooth and well-combined.

Step 3: Add the Corn and Chilies

Stir in the drained sweet corn, green chilies (if using), and green onions (if using). Mix until evenly distributed.

Step 4: Bake the Dip

Transfer the mixture to a greased 9×9-inch baking dish or a similar size baking dish. Spread it out evenly.

Bake for 20-25 minutes, or until the dip is hot and bubbly and the cheese is melted and golden on top.

Step 5: Garnish and Serve

 

Remove from the oven and sprinkle with fresh cilantro (optional). Serve immediately with tortilla chips, crackers, or fresh veggies for dipping.

Notes

  • For Extra Creaminess: You can add a little more sour cream or even some mayonnaise for extra creaminess.
