Ingredients
For the Soup:
- 1 medium cauliflower head, chopped – The star of the soup.

Instructions
Step 1: Sauté the Vegetables
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, and sauté for 3-4 minutes until softened and fragrant.
Step 2: Cook the Cauliflower
- Add the chopped cauliflower to the pot and stir it with the onion and garlic for another 2-3 minutes.
- Pour in the vegetable broth and bring the mixture to a simmer.
- Cover the pot and let it cook for 15-20 minutes, or until the cauliflower is tender.
Step 3: Blend the Soup
- Once the cauliflower is soft, use an immersion blender to blend the soup until smooth and creamy.
- If you don’t have an immersion blender, carefully transfer the soup in batches to a regular blender, blend until smooth, and return it to the pot.
Step 4: Add the Cream and Cheese
- Stir in the whole milk and cheddar cheese.
- Continue to cook on low heat, stirring until the cheese is melted and the soup is smooth.
Step 5: Season and Serve
- Season with salt, pepper, and paprika to taste.
- Garnish with fresh parsley if desired.
