For the Soup:

  • 1 medium cauliflower head, chopped – The star of the soup.
  • 1 tablespoon olive oil – To sauté the veggies.
  • 1 small onion, diced – For flavor and sweetness.

  • 3 cups vegetable broth – The base for a flavorful soup.
  • 1 cup whole milk – For that creamy texture.
  • 2 cups shredded cheddar cheese – Because cheese makes everything better.
  • 1/2 teaspoon salt – To bring all the flavors together.
  • 1/4 teaspoon black pepper – For a little kick.
  • 1/4 teaspoon paprika – Adds warmth and subtle smokiness.
  • Fresh parsley, chopped (optional) – For garnish and a pop of color.

Instructions

Step 1: Sauté the Vegetables

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, and sauté for 3-4 minutes until softened and fragrant.

Step 2: Cook the Cauliflower

  1. Add the chopped cauliflower to the pot and stir it with the onion and garlic for another 2-3 minutes.
  2. Pour in the vegetable broth and bring the mixture to a simmer.
  3. Cover the pot and let it cook for 15-20 minutes, or until the cauliflower is tender.

Step 3: Blend the Soup

  1. Once the cauliflower is soft, use an immersion blender to blend the soup until smooth and creamy.
    • If you don’t have an immersion blender, carefully transfer the soup in batches to a regular blender, blend until smooth, and return it to the pot.

Step 4: Add the Cream and Cheese

  1. Stir in the whole milk and cheddar cheese.
  2. Continue to cook on low heat, stirring until the cheese is melted and the soup is smooth.

Step 5: Season and Serve

  1. Season with salt, pepper, and paprika to taste.
  2. Garnish with fresh parsley if desired.

Step 6: Enjoy!

  1. Serve the soup hot with a slice of crusty bread, crackers, or a light salad on the side.

  • Use Fresh Cauliflower – Fresh cauliflower will give the best texture and flavor for this soup.
