- 1 cup cottage cheese (full-fat or low-fat)
- 2 large eggs
- ¼ cup honey or maple syrup
- ½ teaspoon vanilla extract
- ½ teaspoon cinnamon
- ⅓ cup oat flour (or almond flour for a lower-carb option)
- ½ teaspoon baking powder
- 1 cup fresh or frozen blueberries
Instructions
Step 1: Preheat & Prep
- Preheat your oven to 350°F (175°C).
- Lightly grease a small baking dish with butter or nonstick spray.
Step 2: Mix the Batter
- In a mixing bowl, whisk together cottage cheese, eggs, honey (or maple syrup), vanilla extract, and cinnamon until well combined.
- Stir in oat flour and baking powder, mixing until smooth.
- Gently fold in blueberries, saving some for topping.
