  • 2 large eggs
  • ¼ cup honey or maple syrup
  • ½ teaspoon vanilla extract
  • ½ teaspoon cinnamon
  • ⅓ cup oat flour (or almond flour for a lower-carb option)
  • ½ teaspoon baking powder
  • 1 cup fresh or frozen blueberries

Instructions

Step 1: Preheat & Prep

  1. Preheat your oven to 350°F (175°C).
  2. Lightly grease a small baking dish with butter or nonstick spray.

Step 2: Mix the Batter

  1. In a mixing bowl, whisk together cottage cheese, eggs, honey (or maple syrup), vanilla extract, and cinnamon until well combined.
  2. Stir in oat flour and baking powder, mixing until smooth.
  3. Gently fold in blueberries, saving some for topping.

Step 3: Bake Until Set

  1. Pour the batter into the greased baking dish and sprinkle extra blueberries on top.
  2. Bake for 25-30 minutes, or until the edges turn golden and the center is set.

Step 4: Cool & Serve

  1. Let the bake cool for 5 minutes, then slice and enjoy warm.
  2. Drizzle with extra honey or serve with Greek yogurt for an extra creamy touch.
