Ingredients
1 sheet puff pastry (thawed if frozen)
⅓ cup crumbled blue cheese
¼ cup finely chopped walnuts (toasted for extra flavor)
1 tsp fresh thyme leaves (or ½ tsp dried thyme)
1 egg (beaten, for egg wash)
Freshly ground black pepper (to taste)
Optional Additions
1 tbsp honey (for a sweet drizzle finish)
Extra thyme sprigs or chopped parsley for garnish
Instructions
Step 1: Preheat the Oven
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Step 2: Roll Out the Puff Pastry
Lightly flour your surface and gently roll out the puff pastry into a 10×12-inch rectangle to even it out.
Step 3: Add the Filling
Evenly sprinkle blue cheese across the pastry.
Top with chopped walnuts and fresh thyme leaves.
Add a few cracks of black pepper to taste.
Step 4: Fold & Slice
Fold the pastry in half lengthwise, pressing down gently to seal.
Using a sharp knife or pizza cutter, slice into 1-inch wide strips.
Step 5: Twist into Twirls
Take each strip and twist both ends in opposite directions to form a spiral.
Place each twirl on the prepared baking sheet, spacing them apart.
Step 6: Brush and Bake
Brush the tops with beaten egg for a golden finish.
Bake for 15–18 minutes, or until puffed and deeply golden brown.
Step 7: Garnish & Serve
Let cool slightly.
Drizzle with a touch of honey and garnish with extra thyme if desired.
Serve warm or at room temperature.
Notes
Thaw Puff Pastry Properly – Let it come to room temperature without becoming sticky
Use Quality Blue Cheese – Creamy and crumbly cheeses like Gorgonzola or Roquefort work beautifully
Toast the Walnuts – Toasting enhances the flavor and gives them a delightful crunch
Press Gently – Don’t squish the layers too tightly when folding; you want it airy and flaky
Watch Closely While Baking – Puff pastry can go from golden to overdone quickly
