  • 1 tbsp cornstarch

  • 1 tsp baking powder

  • ½ tsp salt

  • 1 cup milk

  • ½ cup unsalted butter (1 stick), melted

Instructions

Step 1: Prepare the Blackberry Filling

  1. Preheat your oven to 350°F (175°C).

  2. In a large bowl, combine the blackberries, sugar, lemon juice, cornstarch, and vanilla extract.

  3. Stir gently until the berries are evenly coated and the mixture looks glossy.

  4. Pour the berry mixture into the bottom of your baking dish and spread it out evenly.

Step 2: Make the Cobbler Batter
5. In a separate bowl, whisk together the flour, sugar, baking powder, and salt.
6. Stir in the milk until smooth.
7. Add the melted butter and mix until just combined (a few lumps are okay).

Step 3: Assemble the Cobbler
8. Pour the batter evenly over the blackberry filling.
9. Do not stir—the batter will rise to the top as it bakes and create a beautiful golden crust.

Step 4: Bake the Cobbler
10. Bake for 40–45 minutes, or until the top is golden brown and a toothpick inserted into the topping comes out clean.
11. If using frozen berries, add an extra 5 minutes to the bake time.
12. Let the cobbler cool on a wire rack for at least 10 minutes before serving.

Step 5: Serve and Enjoy
13. Spoon warm cobbler into bowls and top with a scoop of vanilla ice cream or a dollop of whipped cream.
14. Dust with powdered sugar for an extra-pretty presentation, if desired.
