2 cups cooked chicken, diced or shredded
-
1 cup frozen mixed vegetables (peas, carrots, corn, green beans)
-
1 can (10.5 oz) cream of chicken soup
-
½ cup chicken broth
-
½ tsp garlic powder
-
½ tsp onion powder
-
½ tsp black pepper
-
¼ tsp salt
For the Biscuit Topping:
-
1 cup Bisquick baking mix
-
½ cup milk
-
1 large egg
Instructions
Step 1: Preheat the Oven
Preheat your oven to 400°F (200°C).
Lightly grease your baking dish with cooking spray or butter.
Step 2: Make the Filling
In a mixing bowl, combine the cooked chicken, frozen vegetables, cream of chicken soup, chicken broth, garlic powder, onion powder, salt, and pepper.
Stir until everything is well mixed.
Pour the filling into the prepared baking dish and spread it out evenly.
Step 3: Prepare the Biscuit Topping
In a separate bowl, whisk together the Bisquick mix, milk, and egg until smooth.
Pour the batter evenly over the top of the filling, spreading it gently if needed to cover.
Step 4: Bake
Bake uncovered for 30-35 minutes, or until the topping is golden brown and the filling is bubbly around the edges.
Step 5: Cool and Serve
Let the pot pie cool for 5 minutes before serving to allow the filling to set.
Scoop and serve warm.
Notes
Use Leftover Chicken – Rotisserie chicken works beautifully for this recipe.
Don’t Overmix – Stir the biscuit batter just until smooth for a tender crust.
Add Extra Seasoning – Taste the filling and adjust salt and pepper as needed.
Customize – Add sautéed mushrooms, chopped spinach, or a sprinkle of cheese for a fun twist.
