Ingredients
- Biscoff Cookies (20 pieces) – The perfect crisp base.
- Vanilla Ice Cream (2 cups, softened) – The creamy filling.
- Biscoff Spread (½ cup, melted slightly) – Adds extra caramelized flavor.
- Crushed Biscoff Cookies (¼ cup, for coating, optional) – For an extra crunch.
Instructions
Line a baking sheet with parchment paper. Lay out half of the Biscoff cookies as the base.
Scoop about 2 tablespoons of softened vanilla ice cream onto each cookie. Drizzle a little melted Biscoff spread over the ice cream for extra flavor.
Top each with another Biscoff cookie and gently press down to spread the ice cream evenly.
Place the assembled sandwiches on the baking sheet and freeze for at least 2 hours, or until firm.
For extra indulgence, dip the edges of each sandwich in crushed Biscoff cookies before serving.
Enjoy straight from the freezer for a refreshing, crunchy, and creamy treat!
Notes
- Use Slightly Softened Ice Cream – Makes assembly easier.
- Don’t Overfill – A little ice cream goes a long way to prevent mess.
