Ingredients

  • Biscoff Cookies (20 pieces) – The perfect crisp base.
  • Vanilla Ice Cream (2 cups, softened) – The creamy filling.
  • Biscoff Spread (½ cup, melted slightly) – Adds extra caramelized flavor.
  • Crushed Biscoff Cookies (¼ cup, for coating, optional) – For an extra crunch.

Instructions

Step 1: Prepare the Cookies

Line a baking sheet with parchment paper. Lay out half of the Biscoff cookies as the base.

Step 2: Add the Ice Cream Filling

Scoop about 2 tablespoons of softened vanilla ice cream onto each cookie. Drizzle a little melted Biscoff spread over the ice cream for extra flavor.

Step 3: Assemble the Sandwiches

Top each with another Biscoff cookie and gently press down to spread the ice cream evenly.
