  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon melted butter (plus extra for cooking)

Instructions

Step 1: Prepare the Batter

  1. In a large mixing bowl, mash the bananas until smooth.
  2. Add the milk, egg, vanilla extract, and melted butter. Whisk until combined.
  3. In a separate bowl, mix the flour, sugar (if using), baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Be careful not to overmix; a few lumps are fine.

Step 2: Cook the Pancakes
5. Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
6. Pour about ¼ cup of batter onto the skillet for each pancake.
7. Cook for 2-3 minutes, or until bubbles form on the surface and the edges look set. Flip the pancake and cook for another 1-2 minutes until golden brown.

Step 3: Serve and Enjoy
8. Transfer the pancakes to a plate and repeat with the remaining batter. Keep cooked pancakes warm in a low oven if needed.

  • Use Ripe Bananas: The riper the bananas, the sweeter and more flavorful your pancakes will be.
