Description

There’s nothing quite like the comforting aroma of freshly baked Banana Nut Bread. This moist and flavorful loaf is packed with ripe bananas and crunchy nuts, making it a delightful treat for breakfast, snacks, or dessert. It’s simple to make and perfect for using up those overripe bananas sitting on your counter.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 medium ripe bananas, mashed (about 1 1/2 cups)
  • 1/2 cup unsalted butter, melted
  • 3/4 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup chopped nuts (walnuts or pecans work best)

Instructions

Step 1: Prepare and Preheat

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×5-inch loaf pan or line it with parchment paper.

Step 2: Mix Dry Ingredients

  1. In a medium bowl, whisk together the flour, baking soda, and salt.

Step 3: Mix Wet Ingredients

  1. In a large bowl, mash the bananas with a fork.
  2. Stir in the melted butter, brown sugar, eggs, and vanilla extract until well combined.

Step 4: Combine Wet and Dry Ingredients

  1. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Do not overmix.
  2. Fold in the chopped nuts gently.

Step 5: Bake the Bread

  1. Pour the batter into the prepared loaf pan, smoothing the top.
  2. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.

Step 6: Cool and Serve

  1. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  2. Slice and enjoy as is, or with a spread of butter or cream cheese.

Notes

  • Use Overripe Bananas: The riper the bananas, the sweeter and more flavorful your bread will be.
  • Avoid Overmixing: Stir just until the ingredients are combined to keep the bread tender.
  • Customize: Add a handful of chocolate chips or dried fruit for a fun twist.
