Beat in the egg, vanilla extract, and honey until smooth.
-
In a separate bowl, whisk together flour, baking powder, cinnamon, and salt.

Gradually add dry ingredients to the wet mixture and mix until combined.

Cover and chill the dough for at least 30 minutes.
Step 2: Bake the Cookies
-
Preheat oven to 350°F (175°C).
-
Line baking sheets with parchment paper.
-
Scoop 1 tablespoon of dough and roll into balls. Place 2 inches apart on the sheet.
-
Flatten slightly with the bottom of a glass or your hand.
-
Bake for 10–12 minutes or until edges are lightly golden.
-
Let cool on the pan for 5 minutes, then transfer to a wire rack to cool completely.
Step 3: Make the Cream Filling
-
In a medium bowl, beat softened butter until creamy.
-
Add powdered sugar, honey, and cinnamon. Beat until light and fluffy.
-
Add milk 1 tablespoon at a time until desired consistency is reached.
Step 4: Assemble the Sandwich Cookies
-
Spread or pipe a generous layer of filling on the flat side of half the cookies.
-
Top with the remaining cookies to create sandwiches.
-
Press gently to seal.
-
Optional: Roll edges in finely chopped nuts for a pretty, crunchy finish.
Step 5: Chill & Serve
-
Let cookies set in the fridge for 15–20 minutes if the filling is soft.
-
Serve at room temperature for the best flavor and texture.
Notes
Use Room Temp Ingredients – For smooth mixing and even texture.
Chill the Dough – Prevents spreading and makes shaping easier.
Don’t Overbake – These cookies should be just lightly golden, not crispy.
Use a Piping Bag – For a neater, bakery-style filling application.
