½ tsp salt
-
¼ tsp black pepper
-
½ tsp garlic powder
-
½ tsp onion powder
Optional Add-Ins:
-
½ cup shredded cheese (cheddar, mozzarella, or Swiss)
-
¼ cup chopped green onions or chives
-
½ cup diced bell peppers or mushrooms
-
½ cup chopped spinach or kale
-
A pinch of red pepper flakes for heat
Instructions
Step 1: Preheat the Oven
Preheat your oven to 375°F (190°C). Lightly grease a baking dish or muffin tin.
Step 2: Whisk the Egg Mixture
In a large bowl, crack the eggs and whisk until smooth.
Add cottage cheese, salt, pepper, garlic powder, and onion powder.
Mix until fully combined.
Step 3: Add Your Mix-Ins
Stir in any extras you like—shredded cheese, veggies, herbs, or greens.
Pour the mixture into the greased baking dish or divide evenly into a muffin tin for individual servings.
Step 4: Bake Until Set
Bake for 25–30 minutes in a dish or 20–22 minutes in a muffin tin, until the eggs are puffed and set in the center.
A knife inserted into the middle should come out clean.
Step 5: Cool Slightly & Serve
Let rest for 5 minutes before slicing or removing from muffin cups.
Serve warm with toast, salad, or fruit for a balanced meal.
