Ingredients
For the Toast
- 2 slices of whole-grain bread (or your preferred bread)
- 1 ripe avocado
- ½ teaspoon lemon juice
- Salt and pepper, to taste
For the Poached Egg
- 2 eggs
- Water, for poaching
- 1 teaspoon vinegar (optional, helps the egg whites stay together)
Instructions
Step 1: Toast the Bread
- Toast the bread in a toaster or on a grill until crispy and golden.
Step 2: Prepare the Avocado
- While the bread is toasting, cut the avocado in half and remove the pit.
- Scoop the flesh into a bowl and mash it with a fork.
- Add lemon juice, salt, and pepper, and mix well.
Step 3: Poach the Eggs
- In a medium pot, bring water to a simmer (not a rolling boil).
- Add 1 teaspoon of vinegar to the water (optional but helps with egg whites).
- Crack each egg into a small bowl, then gently slide them into the water.
- Let the eggs cook for about 3-4 minutes for soft, runny yolks.
- Use a slotted spoon to carefully remove the eggs from the water and set them on a plate.
Step 4: Assemble the Toast
- Spread the mashed avocado evenly on the toasted bread.
- Place a poached egg on top of each slice of avocado toast.
Step 5: Serve and Enjoy!
- Sprinkle with a little extra salt, pepper, and red pepper flakes (optional).
- Serve immediately and enjoy your delicious, creamy, and nutrient-packed meal!
Notes
Perfectly ripe avocado – Make sure your avocado is ripe but not overripe for the creamiest texture.
Poach with care – Don’t overcrowd the pot, and make sure the water is just simmering, not boiling.
Customize your toast – Add fresh herbs like cilantro or basil for a refreshing twist.
