For the Apple Cinnamon Bread:

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • 1 tsp ground cinnamon
  • ¼ tsp salt
  • 2 large eggs
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter (melted)
  • ½ cup sour cream
  • 1 tsp vanilla extract
  • 2 cups apples (peeled, cored, and chopped into small cubes; about 2 medium apples)

For the Cinnamon Sugar Topping:

 

  • 2 tbsp granulated sugar
  • 1 tsp ground cinnamon

Instructions

Step 1: Preheat the Oven

Preheat your oven to 350°F (175°C) and grease or line a 9×5-inch loaf pan with parchment paper.

Step 2: Prepare the Dry Ingredients

In a large bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt until well combined.

Step 3: Mix the Wet Ingredients

In a separate bowl, beat the eggs and sugar together until light and fluffy. Add the melted butter, sour cream, and vanilla extract, and mix until smooth.

Step 4: Combine Wet and Dry Ingredients

Gradually add the wet mixture to the dry ingredients, stirring until just combined. Be careful not to overmix. The batter will be thick.

Step 5: Fold in the Apples

Gently fold in the chopped apples until evenly distributed throughout the batter.

Step 6: Prepare the Cinnamon Sugar Topping

In a small bowl, mix together the granulated sugar and cinnamon. Set aside.

Step 7: Bake the Bread

Pour the batter into the prepared loaf pan and spread it out evenly. Sprinkle the cinnamon sugar topping generously over the batter.

Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean. If the bread starts to brown too quickly, cover it with foil halfway through baking.

Step 8: Cool & Serve

 

Let the bread cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely. Slice and serve!

Notes

Use Firm Apples – Choose apples like Granny Smith, Honeycrisp, or Fuji, which hold up well during baking.
Don’t Overmix the Batter – Overmixing can lead to dense bread. Mix until just combined.
Let the Bread Cool – Allow the bread to cool before slicing for the best texture.
Check for Doneness – Use a toothpick to ensure the bread is cooked all the way through.
