Ingredients
4 boneless, skinless chicken breasts or thighs
1 cup long-grain white rice (uncooked)
1 can (10.5 oz) cream of chicken soup
1 cup chicken broth
4 oz cream cheese, softened
½ cup sour cream or plain Greek yogurt
1 packet Italian dressing seasoning mix (about 2 tbsp)
1 tbsp olive oil or butter
½ tsp garlic powder
Salt and black pepper to taste
¼ cup grated Parmesan (optional, for added richness)
Fresh parsley or chives, chopped (for garnish)
Instructions
Step 1: Preheat and Prep
Preheat your oven to 375°F (190°C). Lightly grease a 9×13 baking dish with cooking spray or oil.
Step 2: Brown the Chicken (Optional)
For extra flavor, heat 1 tbsp olive oil in a skillet over medium heat. Season the chicken with salt, pepper, and garlic powder, then sear for 2–3 minutes per side until golden. This step is optional but adds depth.
Step 3: Mix the Sauce
In a large bowl, whisk together the cream of chicken soup, cream cheese, sour cream, chicken broth, and Italian seasoning mix. Stir in the Parmesan if using. Whisk until smooth and creamy.
Step 4: Assemble the Dish
Pour the uncooked rice evenly into the bottom of the baking dish.
Place the chicken on top of the rice.
Pour the cream sauce over the chicken and rice, spreading evenly to coat.
Cover the dish tightly with foil.
Step 5: Bake to Perfection
Bake for 50–60 minutes, until the chicken is fully cooked and the rice is tender.
Check halfway and stir the sauce gently around the rice if needed.
Remove foil for the last 10 minutes to slightly brown the top.
