1/2 teaspoon salt

24 Andes Mints (unwrapped)


Instructions

Step 1: Make the Dough

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, then mix in the vanilla extract.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.

Step 2: Bake the Cookies
5. Scoop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
6. Bake for 8-10 minutes, or until the edges are set but the centers look slightly underdone.

Step 3: Add the Andes Mints
7. Remove the cookies from the oven and immediately place an Andes Mint on top of each cookie. Let it sit for 1-2 minutes to soften.
8. Using the back of a spoon or a spatula, gently spread the melted mint across the top of the cookie to create a smooth, glossy layer.

Step 4: Cool and Serve
9. Transfer the cookies to a cooling rack and allow the chocolate topping to set before serving.
