  • 1 lb sea scallops (dry-packed, not bay scallops)

  • 1 tbsp olive oil

  • ½ tsp salt

  • ½ tsp black pepper

  • ½ tsp garlic powder

  • ½ tsp paprika (optional, for color)

  • Lemon wedges (for serving)

  • Fresh parsley or chives, chopped (for garnish)

Optional Add-Ons:

  • 1 tbsp melted butter for brushing before serving

Instructions

Step 1: Prep the Scallops
If using frozen scallops, thaw them in the fridge overnight or under cold running water.
Pat scallops dry with paper towels—dry scallops are key to getting a golden crust.
Remove the small side muscle if still attached (it’s tough when cooked).

Step 2: Season the Scallops
In a bowl, toss scallops with olive oil, salt, pepper, garlic powder, and paprika until evenly coated.
Let them sit for 5 minutes to absorb the seasoning while the air fryer preheats.

Step 3: Preheat & Arrange in Air Fryer
Preheat your air fryer to 400°F.
Place the scallops in a single layer in the air fryer basket or tray, leaving space between each for air circulation.

Step 4: Air Fry the Scallops
Cook for 6–8 minutes, flipping halfway through.
Scallops are done when they are opaque and slightly golden on the outside.
Internal temperature should reach 120°F–125°F for medium-rare (or 130°F for well-done).

Step 5: Serve & Garnish
Remove from the air fryer and brush with melted butter if desired.
Serve immediately with lemon wedges and a sprinkle of fresh herbs.

Notes

Dry Them Thoroughly – Moisture prevents browning, so pat scallops very dry.
Don’t Overcrowd the Basket – Air needs to circulate for a proper sear.
Use Dry-Packed Scallops – Avoid “wet” scallops treated with chemicals—they don’t sear well.
