Ingredients

1 medium eggplant, sliced into ½-inch rounds
1 tbsp olive oil
½ tsp salt
¼ tsp black pepper
½ tsp garlic powder
½ tsp smoked paprika (optional, for flavor)
2 tbsp grated Parmesan (optional for topping)

½ cup breadcrumbs (panko or regular)
1 egg, beaten (or use olive oil for vegan version)

Instructions

Step 1: Prepare the Eggplant
Wash and slice eggplant into ½-inch thick rounds.
Optional: Lightly salt both sides and let sit for 15 minutes to draw out bitterness. Pat dry before cooking.

Step 2: Season or Bread
Option 1: Simple Seasoning
Toss eggplant slices in olive oil, salt, pepper, garlic powder, and paprika.

Option 2: Crispy Coating
Dip slices in beaten egg (or brush with olive oil), then coat with breadcrumbs for extra crunch.

Step 3: Preheat the Air Fryer
Preheat air fryer to 375°F (190°C) for 3 minutes.

Step 4: Air Fry the Eggplant
Place slices in a single layer in the air fryer basket. Don’t overcrowd—work in batches if needed.
Air fry for 12–15 minutes, flipping halfway through, until golden and tender.
Sprinkle with Parmesan during the last 2 minutes for extra flavor, if using.

Step 5: Serve Hot
